Water is used throughout the food chain ranging from the growing farmlands to the kitchen table, the quality of water can, therefore, have a substantial impact on the food products. Moreover, several food-borne pathogens are waterborne pathogens. The microbial quality of water is therefore essential with respect to food hygiene and food spoilage. Purified water has become an essential part of a modern lifestyle with a lot of information and awareness about suitable RO, TDS in water, alkaline water being in the trend. A lot of information is shared for what kind of purifier is needed and what should be checked; the basic requirement of Hygiene maintenance is something which is not often discussed.
Hygiene is defined as ‘conditions or practices conducive to maintaining health and preventing disease, especially through cleanliness.’ The hygiene of purifier is something not taken seriously in most of the situations. In the recent study reported the presence of Pathogen and coliform bacteria. In addition to these cysts and Mould were also reported. The presence of this kind of bacteria shows the infected water after purification. The majority of these kinds of bacteria occur in biofilms rather than in water phase. A biofilm is defined as ‘layer of microorganisms contained in a matrix (slime layer), which forms on surfaces in contact with water’. Biofilms are responsible for increase bacterial levels, taste and odour changes, coloured water due to iron and sulphate reducing bacteria’s.
In general biofilms have bacteria constsium, fungi and even higher organism like nematodes, larvae been reported. The recent reports of viruses and parasites been trapped in the biofilms. The literature even reports the increase in the resistance of organisms in biofilms to antibiotics and disinfectants thereby biofilms becoming a reservoir for subsequent spread of pathogenic organisms.
The mechanism of biofilm formation has intensely studied in the literature with both gram-negative and gram-positive bacteria. Various Inducers have been reported like N-Acetyl Homoserine Lactones (AHLS) in gram-negative species, oligopeptides as inducers in Positive bacteria and Furanone which is present in both gram-positive & negative and acts as an interspecific inducer. These intracellular molecules are responsible to form a quorum i.e. minimum number to derive adaptive plasticity, sporulation, gene exchange, enzyme production, virulence, synthesis of antibiotics and metabolites, etc which essential conditions for biofilm formation.
Microorganisms can enter the purifier through two main categories firstly surviving the treatment process of water purifier as most microorganisms found in the purifier are also found in the water source. Secondly, the recontamination- the purifier pipes and tank are next spot after purification and requires to be the most hygienic as water gets stored in these areas making these areas susceptible for getting infringement by pathogen microbes. The water is also contaminated by leaking pipes, joints, and valves that allow for the entry of microbes. Poorly designed or maintained tanks can allow for recontamination including the sediment can accumulate in tanks providing a habitat for microorganisms. The storage unit is the major focus of recontamination problems, especially when water remains for long residence times.
The bacterial biofilms on the pipe and tanks surface tend to release the cells released into the flowing water, What makes these biofilms unnoticed is accessibility to the internal surfaces of the pipe and tank. The field samples of pipe and tanks show’s not only the microbe’s presence but also bio-film inside the tank. The surprising element was, finding the biofilms even in the recent service ones. This shows that even if you’re getting the service done regularly doesn’t promise the microbe-free water.
